Zimbowls Creamy Peanut Butter Kale: A Zimbabwean Delight





This vibrant dish finds its roots in the heart of Zimbabwean cuisine, blending the earthy flavors of kale with the rich, creamy texture of peanut butter.   • 1 onion, finely chopped

  • 2 large tomatoes, finely diced

  • 1 pound kale, leaves thinly sliced

  • 5 tablespoons smooth peanut butter

  • Salt, to taste

  • Crushed red pepper flakes (optional, if you prefer spicy foods)

Instructions:

  1. Prepare the Ingredients: Begin by washing the kale leaves thoroughly, then slice the leaves into thin strips. Finely chop the onion and mince the garlic, setting them aside for the cooking process.

  2. Sauté the Onion and Garlic: In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion, stirring occasionally, until it becomes translucent and soft, about 5-7 minutes. Introduce the minced garlic and cook for another 1-2 minutes, until fragrant.

  3. Cook the Kale: To the skillet, add the sliced kale in batches, allowing each addition to wilt slightly before adding more.
